Kafé Spire is run by the non-profit organization Dype Røtter, based at Reppe Søndre Farm in Trondheim. Here, they combine organic farming, café operations, and a farm shop with a strong commitment to environmental sustainability, circular resource use, and social inclusion. Their work is grounded in a circular mindset, with the goal of caring for the soil, reducing waste, and living in a reciprocal relationship with nature.
Dype Røtter also offers jobs and internship opportunities for refugees, with a particular focus on women. Their experiences, skills, and food cultures leave a clear mark on the menu, which is based on local and organic ingredients—often grown on the farm itself.
At Rosendal Kafé, Kafé Spire serves lunch dishes such as soup, open-faced sandwiches, and salads, as well as coffee and cakes.

Dype Røtter is a living example of how soil, soul, and community can be renewed together. Through our organic market garden, cozy café, and creative workshop activities, we enrich local communities, support refugees, and nourish the land we work on.
Despite its impact and the passion it inspires, our work does not always fit into traditional grant-funding categories. Love and dedication alone cannot keep the soil turned, the café buzzing, and creativity alive.

This week’s menu will be Thai sweet potato soup, served with open-faced sandwiches and a potato salad with mustard and tarragon.
The open-faced sandwich can be chosen from the following options:
